Does anyone else love tacos? I could eat them every week!

Our taco recipe is one of my go-to dinners! It’s a win with my toddler, my 7 year old, and the grown-ups here. It’s also a great option for us when having guests over who eat meat. (Another win!)

Sorry. Couldn’t help myself….I know! I’m a total dork.

(Speaking of dorks….Did y’all have “senior quotes” in your year book? I read a lot of different things and ended up picking a quote that was from John Adams. My husband (we dated in high school) forgot to come up with a quote for the day it was due….So, his submission? “You’re a dork, but a good one.” (Quoting ME… I’m sure his mother was thrilled….)

Alright! Back to our regularly scheduled programming: Taco Night!

These are easy peasy (15-20 minutes and dinner is on the table), take no prep, and are DELICIOUS! And gotta love it when something tastes delicious, is pretty healthy too, AND your kids devour it! Raise your hand if that is pretty thrilling! (My hand is raised high! #mamawin)

Top these with any of your favorite toppings. I usually pile on diced tomatoes, chopped spinach, a little bit of cheese (and sometimes salsa or sour cream). We pair this with rice (but if I’m in a pinch, sometimes we just eat tacos. Because…yummy!!)

After drooling over these pictures while I was writing this, I think these will definitely have to be on our menu this week (they usually show up at least 3 times a month, if not more). Now, if only I could remember to have them on Tuesday, we could have “Taco Tuesday” like all of you cool peeps.  

Deliciously Easy Vegetarian Tacos

Serves 4
These vegetarian tacos are SO delicious you will actually FORGET that they are missing beef and are healthy! Win! (Also vegan & gluten free)
Ingredients
  1. 2 cans black beans, rinsed & drained
  2. 1 can chick peas, rinsed & drained
  3. 1 onion, diced
  4. 2 T oil (of your choice)
  5. 1t cumin
  6. 1 t chili powder
  7. 1/2 t garlic powder
  8. 1/4 t paprika
  9. 1/4 oregano (I usually use Italian seasoning b/c it's what I have on hand)
  10. 1 t salt
  11. 1 box of hard taco shells
Add ingredients to shopping list

Instructions
  1. Preheat oven to 350.
  2. Saute onion in oil until translucent.
  3. Add beans and seasonings.
  4. Let everything simmer together for about 10 minutes.
  5. Place taco shells in a oven safe container. Spoon in bean mixture to taco shells.
  6. (Top with cheese if desired.)
  7. Place in oven for about 7 minutes until tacos shells are crispy.
  8. Top these with any of your favorite toppings.
  9. Enjoy!
Notes
  1. I have found a 9x13 pyrex pan works well for baking the tacos in the oven.
