One activity that my kiddos REALLY look forward to is PANCAKE NIGHT!
Friday nights we heap our plates with delicious, golden pancakes (and also some eggs) and enjoy some time together.
Before we instituted “Family Pancake Night,” I had dreams of calm Saturday mornings with pancakes freshly made, ripe berries, orange juice, and warm syrup….sigh….
Umm…
I don’t know about your house on Saturday mornings, but this just doesn’t happen over here.
Switching to Nighttime
Having pancakes at NIGHT was a game changer for us. We can still have that fun, family time together, but without the stress of making it happen Saturday MORNING.
The point of the pancakes isn’t about what time of day you have them, just that you are creating memories and spending time TOGETHER. (If you can do pancakes Saturday mornings, I salute you!)
Tradition Was Born
This tradition started a few years ago as an easy and cheap meal to throw into our menu each week and it became such a hit that it’s stuck around! (And let’s be honest, my vision of Saturday morning pancakes-remember the dream of fresh pancakes, ripe berries, warm syrup?-well, it wouldn’t leave my brain.)
It’s nice not having to “think” about a plan for Friday dinner each week (#menuplanningishard)!
My two year old actually SQUEALS when we tell him we are having pancakes for dinner. He will immediately tell you “pancakes, eggs!” because he knows the routine and LOVES it! Now that he is a bit older, we might watch part of a movie while we eat our pancakes too. Pancake AND Movie Night? What’s not to love?)

Want the recipe we use each week? See below and (unless you are one of those rock star families that have pancakes each week on Saturday mornings) declare it a “Family Pancake Night” Tonight!
(Cool Saturday morning peeps, I hope you will still associate with me! Ha!)
- all-purpose flour 2 cups
- sugar 3 tablespoons
- salt 1 teaspoon
- baking powder 2 tablespoons
- eggs 2 (beaten separately before adding)
- butter 1/4 cup (melted)
- milk (I use almond milk) 1 3/4-2 cups
- Mix dry ingredients.
- Combine beaten eggs & melted butter to the milk & slowly stir into the flour mixture.Stir until well combined.
- Let sit about 10 minutes. (Let your pan start heating up during this time.)
- These freeze well! Place in gallon-size, freezer bags and toast to reheat. ("Medium" on my toaster over works well.)

This is basically the recipe I use too and it’s the best one I’ve found! You inspired me to make pancakes this morning and I made some with apples, cinnamon, and nutmeg… mmmm!!

What a great idea! If I get fancy, it’s just with berries and a bit of powdered sugar! I don’t think I’ve ever thought of apples! I will have to give it a try!
